Cheese quiche

Dough

1. 1 Rub the flour and margarine together into a crumbly mixture. Add the cheese and the salt and mix well. Add the water and work the dough with your fingertips until it is soft and very smooth.
2. 2 Press the dough directly into a 22 cm diameter pan with a removable bottom. Line the bottom and then the sides. Prick the whole dough with a fork. Chill in the fridge for 5 minutes. Bake in a preheated medium oven for about 20 minutes.

Filling

1. 3 In a bowl, beat the eggs, add the requeijão and keep beating. Add the parmesan, the processed cheese and the margarine. Mix well. Season with salt, pepper and nutmeg.
2. 4 Take the pan out of the oven. Let the crust cool slightly and pour in the filling.
3. 5 Return the pan to the oven and bake for another 30 minutes or until golden. Serve hot.
